Ingredients

1 lb. ground beef, lean
1 large onion, chopped
1 large green bell pepper, chopped
1/2 C Salsa
1 (15.5 oz) can pinto or kidney beans, unsalted (drained)
1 (14.5 oz) can diced tomatoes, no salt (drained)
1/2 tsp salt
1/2 C chopped cilantro
2 C shredded sharp Cheddar cheese, divided
1 1/2 c self rising yellow cornmeal mix
1 C milk (2%)
1 large, egg lightly beaten
Directions
Preheat oven to 400 degrees.
Cook 1st 3 ingredients in a large skillet stirring until beef crumbles. Stir in salsa, beans, tomatoes, Summer 5 minutes, Stir in cilantro.
Spoon into a greased 11X7 inch baking dish. Sprinkle with 1 cup cheese.
Whisk together cornmeal, milk and egg in a medium bowl. Spread batter over beef mixture.
Bake at 400 for 20 minutes or until cornbre3ad is lightly browned.
