Introduction

Don't let the carrot juice scare you! The carrot juice gives the edamame a beautiful orange color but not an overpowering flavor. Cooks up fast for a filling meal. Ingredients

    2 cups cooked couscous
    1 cup shelled edamame
    1 cup carrot juice
    1 clove garlic
    oregano
    parsley

Directions

1. Mince garlic and prepare herbs (season to your liking). Add to carrot juice in a pot before turning the heat on.
2. Cook the couscous according to the box instructions, using carrot juice as a replacement for the water that is called for
3. While couscous is absorbing the liquid, prepare edamame. I use a steam-fresh bag, which takes 5 minutes in the microwave.
4. Fluff couscous. Divide evenly amoung two plates and stir in 1/2c edamame.

This makes 2 servings! Enjoy!

*I saw this recipe in a magazine a really long time ago. I think it was self or shape but I don't remember. This is also slightly altered from their recipe because I can't remember the directions exactly :]
