Ingredients

    4 baking potatoes, scrubbed and baked
    1 large can tuna packed in water
    2 stalks of celery
    1/2 cup diced onion
    1/4 cup reduced fat or fat free cheddar cheese
    1 cup reduced fat or fat free mayonnaise
    1 egg white beaten

Directions

Bake the potatoes until soft. Cut open and scoop out insides into a large mixing bowl. Do not discard the skins. Mix the celery, onions, tuna and mayonnaise(save 2 tbsp for topping) together with the potatoes. Place the mixture back into the potato skins. Beat the egg white until frothy, beat in the saved mayonnaise and pour over tops of potatoes. Sprinkle cheese on top and bake for approx. 30 minutes or until completely heated.
