Introduction

Ingredients

2 cups flour
2/3 cup granulated sugar
1 TBS Poppy Seed
1 TBS baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup dried tart cherries (or sweet)
3 TBS fresh grated orange peel (or less)
1/4 cup unsweetened applesauce
2 TBS water
1 TBS canola oil
1 tsp. cider vinegar
1 cup 2% milk (or lower %-adjust calories)
Directions
Combine dry ingredients into large mixing bowl. Blend all wet ingredients in seperate bowl, pour into dry mixture stirring just until moistened. Gently stir in cherries and orange peel. Fill 12 paper lined muffin cups 3/4 full.
Bake at 400 degrees F oven for 18-22 minutes, or until wooden pick inserted in center comes out clean. Let cool in pan 5 minutes, remove from pan and serve warm.
Makes 12 muffins.
Serving suggestions: These are great without anything but a little butter, or cherry jam is good too just adjust calorie count.
NOTE: Applesauce replaces 1/4 cup melted margarine, if too dry add more applesauce OR water to batter.
