Introduction

This is a great meal to bake for things like holiday breakfast. I prefer it without breakfast meat, but you can add cubed ham, fried bacon, or sausage if you like. Ingredients

    20 slices of bread, cubed
    1 pound light velveeta cheese
    1/2 cup fleishman's olive oil spread (or other marg.)
    2 cups egg beaters (equivalent of 8 eggs)
    4 cups skim milk

Directions

Place bread in greased 9 x 13 pan. Place meat (if used) on top of bread. Melt butter & cheese. Pour over bread. Mix egg beaters & milk, then pour over cheese & bread mix. Cover and refrigerate overnight, to allow bread to soak thoroughly. Bake at 325 degrees for 1.5 hrs, covered on a cookie sheet to catch overflow. Uncover towards end of baking to brown top. You can change serving size if you want. This is cutting the pan into 3 sections across the short side, and 5 sections across the long side.
