Introduction

An alternative to french fries. An alternative to french fries.
Number of Servings: 6

Ingredients

    1.5 lbs red potatos, diced with skin
    .5 tbsp butter or margarine
    1 tsp tarragon
    1 tsp rosemary
    3 large cloves garlic, minced
    2 tsp basil
    1/4 cup parmesan cheese

Directions

Brown butter and garlic in a skillet with rosemary; saute diced potato. Add tarragon and basil. Continue sauteing for about 4 to 5 minutes. When potato is evenly covered with spices, transfer from skillet to cookie sheet. Bake at 350 degrees for 25 minutes on middle rack. Sprinkle parmesan cheese on potatoes and bake for 5 more minutes or until done. NOTE: Use a non-stick pan, rather than using foil. The foil sticks to the potatoes.

Makes 6 4 oz servings (roughly 1/2 cup).
