Low calories, low carb, low fat and oh so yummy! Low calories, low carb, low fat and oh so yummy!
Number of Servings: 2

    2 cups of rhubarb diced
    1 cup water
1 package of sugar free, fat free Jello (any flavor/your fave)
1 packet of Nutrasweet or sugar substitute ( you may add more sugar substitute if you like it a little sweeter)

Boil the 2 cups of rhubarb in the 1 cup water. When rhubarb becomes soft add the packet of Jello ( I use Raspberry or Strawberry), mix well. Add in one packet of sugar substitute and mix. Can be used on ice cream as a sauce or eat the way it is. Low enough in calories you can eat two servings.
1/2 cup servings

Number of Servings: 2

  • I'm actually making this right now! I might even use smaller servings in yogurt or oatmeal...but it sounds delicious! - 7/4/09

Just don't let it cool to much it will turn solid - you can always melt it again, but I don't know what that will do. I always use it all when I make it.
