Ingredients

0.5 cup / 75gms cooked bulgur wheat
1/2 can / 120 grms chickpeas / garbanzo beans
1/2 sweet red pepper
2 spears asparagus
50 gms red onion (could use spring onion)
50 gms courgette / zucchini
Fresh coriander / cilantro
Fresh parsley
Cumin seeds - 1 tbsp
Sprinkle paprika
Garlic cloves x 2
Directions
Serves 1 as a main dish or two as a side dish
Chop veggies and garlic - fry in non stick pan for oil free until soft
Boil bulgur wheat til cooked
Mix all ingredients together
Add lemon juice, fresh coriander, parsley, cumin seeds and paprika to taste
