Introduction

These muffins came out super moist and so chocolatey! Also a good source of potassium and fiber. Can easily be veganized by replacing buttermilk with soy milk and sour cream with vanilla soy yogurt. If you don't like bananas try replacing the banana with applesauce or pumpkin - then you'll just have lowfat chocolate chocolate chip muffins. These muffins came out super moist and so chocolatey! Ingredients

    1-3/4 Cup Flour
    1/4 C. Sugar
    1 tsp. salt
    2-1/2 tsp. baking powder
    1/4 Cup Cocoa Powder
    1 Cup lowfat buttermilk
    1/2 cup mashed very ripe banana (about 2 smallish)
    3 Tbsp Sour cream
    1 tsp. vanilla
    2 Tbsp. instant coffee granuals

Directions

in a large bowl sift together all the dry ingredients. make a well in the center of the dry ingredients.

In a medium bowl mix very well all the wet ingredients. Add to the dry ingrediants and combine until just moist. Fill a prepared regular size muffin tin (12 muffins) 1/3 full.

Bake at 375 for 25-30 minutes or until a toothpick inserted into the center of the muffins comes out clean. Let cool in the muffin tin for about 5 minutes before removing.
