Introduction
Great way to use up leftovers, quick and easy! This is also good with leftover pork chops, or would probably be good with tofu for the vegetarians. Ingredients

8 oz boneless skinless chicken breast, cooked and diced
1 tbsp olive oil
2 cloves garlic, pressed
1 med zucchini, diced (about 1.5 cups)
1 c diced onion
1 c chopped mushrooms
2 oz (handfull) grape tomatoes, sliced or cut in half
1 1/4 c low sodium chicken broth
1 box Garlic and Oil whole wheat Couscous (Near East brand)
1/2 c fresh parsley, finely chopped
1/2 c feta cheese
Directions
Dice up leftover chicken breast (you can use raw, but in that case start cooking the chicken pieces several minutes ahead of everything else)
Heat olive oil over med heat and add onions and garlic. Sautee for about 5 minutes and then add zucchini, mushrooms, tomatoes and cooked chicken.
Cook until vegetables are just softened and pour in chicken broth and spice packet from box of couscous
Bring to a boil and stir in couscous.
Remove from heat, cover, and let stand 5 minutes
Stir in feta cheese and parsley
