I got this recipe from Prevention Magazine originally. This is for an occasional treat, not an everyday dessert. But once & awhile you just have to make something super rich & delicious...this is it! Ingredients

    1 - 9' frozen pie crust, baked & cooled
    3 cups cold fat-free milk
    3/4 cup unsweetened cocoa powder
    2/3 cup Splenda
    6 tablespoons cornstarch
    1/8 teaspoon salt
    2 large eggs, beaten
    1 cup dark chocolate chips
    2 teaspoons pure vanilla extract

Directions

Heat 1 1/2 cups of the milk over medium heat. Meanwhile, stir together the cocoa, Splenda, cornstarch, and salt. While mixing, gradually add the remaining 1 1/2 cups of cold milk and the eggs. Mix until smooth. When the milk in the saucepan is warm, add to the cocoa mixture. Whisk to combine. Pour the mixture into the saucepan. Cook over medium heat, stirring constantly until thickened, about 5 minutes. Remove from the heat.
Add the chocolate chips. Stir until the chocolate melts. Add the vanilla extract and mix. Pour into the pie crust. Cover and refrigerate for 1 to 2 hours, or until set.
Serve topped with whipped cream (if desired). Sit back & enjoy the praise, because if you make them this pie they will love you forever!!
