Introduction

A nice sauce to go with corned beef and cabbage. You could add sage and serve it with Chicken also. A nice sauce to go with corned beef and cabbage. You could add sage and serve it with Chicken also.

Ingredients

    4 tablespoons Olivio
    4 tablespoons flour (white)
    1-2 cups corned beef stock
    1/4 to 1/2 cup parsley chopped
    1tsp. nutmeg (grated)
    salt 1tsp
    freshly ground pepper to taste
    juice of 1/2 lemon

Directions

heat the 4 tablespoons Olivio in a saucepan until melted, not brown. Whisk in the 4 tablespoons of flour and cook for 2-3 minutes while whisking constantly to make a roux. Add 1-2 cups of corned beef cooking liquid or other stock, such as chicken, while whisking. When sauce is smooth, add the juice of half a lemon, 1 tsp of grated nutmeg, and the salt and pepper. Serve hot along side Corned Beef and Cabbage. You could also serve it with chicken. If you do add some ground sage to the sauce. Enjoy!

    are you sure its a serving for 1? sounds really good but really high in calories and sodium. - 6/28/09

    Thanks for the comment. It really is at least 4 servings, so I changed some of the ingredients to lower the calories, and you could also use low sodium beef or chicken broth instead of the corned beef cooking liquid. The feedback was great. thanks again
