Ingredients

    Eggplant, fresh, 7 cup, cubed
    Red Potato, 3 medium, peeled and cubed
    onion, raw, 1 cup chopped
    Tomato, 1 large, diced
    Olive Oil, 0.25 cup
    Salt 2.5 tsp
    Turmeric, ground 2 tsp
    Pepper, red or cayenne ground, 2 tsp
    Garam Masala Indian Spice Mix, 2 tsp
    Garlic, 3 cloves, minced

Directions

In a covered pot, on medium heat saute onions until clear, add tomatoes and spices (salt, pepper, turmeric powder, minced garlic). Cover and cook the onions and tomatoes until soft. Add eggplant and potatoes, stir together and cover. Cook at medium-low heat until eggplant is soft, about 20 minutes. Stir occasionally. Makes 8 1 cup servings.

    sounds delish...but i couldnt find a spice mix other then curry...any suggestions of a substitute? - 7/20/09
