Ingredients

Sauce:
250g Baby Plum Tomatoes (Whole)
Roasted Red Peppers
3 Cloves of Garlic (Whole)
15 Fresh Basil Leaves
1 tbsp Sundried Tomato Pesto
2 Large Chopped Carrots
1 tsp Sugar
For the Bolognaise:
1kg Lean Beef Mince (5% fat)
1 Cup Mushrooms (chopped)
1 Med Onion Chopped
2 Cloves Garlic
Dash of Salt and Pepper to taste
100g Ricotta Cheese
0.25 cup Parmesan Cheese (Grated)
Directions
For the sauce:
Place the Tomatoes, Peppers, Carrots, 3 Cloves of Garlic, Basil Leaves, Pesto and Sugar in a food Processor and blend as finely as you prefer. (I make this almost smooth). Simmer this sauce on the stove for about 20 minutes
For the Bolognaise:
Saute the chopped onions, 2 cloves of garlic and mushrooms first, then add the Beef Mince and fry until nicely browned. Add seasonings. Add the above sauce, ricotta cheese and parmesan cheese. Stir and serve with Spagetti
Serves 8 (1 cup servings)
For variation, you can add a green chilli for a little heat or some smoked paprika for a more mexican taste (though leave out the basil and substitute oregano)
