Ingredients

    One large yam
    1 tsp olive oil
    Generous sprinkle of course salt
    Generous sprinkle of oregano (or your choice of spices)

Directions

Cut potato into wedges or fries. Put in a bowl. Add 1 tsp olive oil. Grind salt and sprinkle oregano overtop. Toss to coat. Arrange in a single layer on baking sheet sprayed with nonstick spray.

Bake at 450 F for 8 minutes, then turn and bake another 6-8 minutes.

Makes 23 fries, about 4 servings.
