1 LB RED POTATOES (OR ANY VARIETY YOU LIKE)
3 OZ DILL PICKLES
3/4 CUP MAYONAISSE
1 TBSP. LEMON PEPPER
1 TSP SALT
1 TSP PAPRIKA
PICKLE JUICE
Directions
FIRST BOIL WATER IN A BIG POT. WHILE IT'S BOILING DICE POTATOES AND THEN ADD TO WATER. COOK UNTIL THEY SOFTENED BUT NOT MUSHY.
WHILE THE POTATOES COOK, CHOP PICKLES FINELY. ADD PICKLES TO SERVING BOWL WITH MAYONAISSE AND ALL SEASONINGS EXCEPT PAPRIKA.
WHEN POTATOES ARE DONE COOKING, DRAIN THEM. ADD TO SERVING BOWL WITH OTHER INGREDIENTS AND MIX WELL. USE A TSP TO TASTE TEST IT AND ADD ANY EXTRA SEASONING AS DESIRED. LAST I ADD A LITTLE PICKLE JUICE LIKE 1/4 CUP TO GIVE IT A LITTLE PERK AND MIX IT UP. THEN SPRINKLE PAPRIKA ACROSS THE TOP, COVER THE DISH WITH A LID OR PLASTIC WRAP AND CHILL UNTIL READY TO BE SERVED.
