Introduction
Suran is a Yam and is very tasty.The only problem with this is that it sometimes causes itching on the hands and in the mouth so one has to be careful while buying it.Look for the non-itchy variety. This same preparation can be made with purple Yam called Konphal(Jimikand) or the White Yams that are shaped like Sweet Potatoes.The fresh Coriander leaves are optional because some folks use them while others do not. INGREDIENTS COMMON FOR BOTH PREPARATIONS
250gms.Suran(Indian Yam)
0.25cup Roast unsalted Peanuts
0.25 cup shredded Raw Coconut
2tbsps.Lemon Juice
1tsp.Brown Cane Sugar
5 hot Green Chillies
Salt to taste
1.5tsps.Cumin Seeds
2tbsps.Clarified Butter( Ghee)
OPTIONAL
1 bunch fresh Coriander(Cilantro)Leaves
Directions
SURANACHI BHAJI
Peel,wash and cut the Suran into small cubes.Apply Lemon juice and set aside for 15 minutes.This clears off the itching problem.
Slit Green Chillies lengthwise and powder the Roast unsalted Peanuts coarsely.If using chop the Coriander Leaves finely.
Heat Ghee in a wok and add Cumin seeds and slit Green chillies.When these sputter add the seasoned Suran cubes and saute on low flame for 2-3 minutes.Add Water,Peanut Powder and Salt to taste.Cover and simmer till Water is absorbed.Add the shredded Raw Coconut and Sugar.Mix well and steam for 2 minutes more.Add Coriander Leaves if using and serve hot.
SURANACHA KEES
Peel and wash Suran.Grate and mix in Lemon Juice thoroughly in it.Set aside for 15minutes.Mix in the Roast Peanut Powder,shredded Raw Coconut and Salt to taste.
Heat Ghee in a wok.Add Cumin seeds and slit Green Chillies.When these sputter lower flame and add the grated and seasoned Suran.Mix well and add 1 cup of Water and simmer covered till the Water is absorbed and Suran is cooked.Spinkle in Sugar and mix well.Steam covered for 2-3 minutes more.Serve hot.If desired sprinkle finely chopped Coriander Leaves on top as garnish.
TIPS
It comes to 228 calories per serve if made with Yams and approximately 200 calories per serve with Konphal (Jimikand).
