Number of Servings: 8

Ingredients

    2 Medium Sweet onions (Vidalia preferred), chopped
    2 pounds top Round Steak or Top Round Roast, all visible fat removed, cut into 1 inch pieces
    2 bay leaves
    1/2 teaspoon dried tarragon
    1 cup fat free, no salt added beef broth
    8 ounce can no-salt added tomato sauce
    8 ounces of fresh small mushrooms
    2 tblspoons of cornstarch
    1/4 cup of water

Directions

Put everything in the slow cooker EXCEPT the mushrooms, cornstrach and water. Cook on low for 5 hours or on high for 2 hours. Stir in the mushrooms. Cook on low for 3 hours until meat is tender. Remove the Bay leaves. In a small bowl combine the water and cornstarch, stir to dissolove. Stir into beef mixture. Cook 15-20 minutes more or until the liquid is slightly thickened.
