Introduction

Ingredients

    Salad

    1/2 large head green cabbage, very finely chopped (1/4" strips)
    1/4 c dry roasted peanuts, coarsely crushed in food processor, or chopped
    3/4 c thinly sliced scallions
    3/4 c chopped cilantro

    Dressing

    2T rice vinegar
    1T agave nectar, honey, sugar or splenda
    2 tsp sesame oil
    2 tsp soy sauce
    1 tsp Sriracha sauce
    1/4 cup canola or peanut oil.


Directions

In a small bowl or measuring cup, combine all dressing ingredients except the canola or peanut oil. Mix well. Gradually whisk in oil until combined. Set aside.

Combine all salad ingredients in a large bowl. Combine with a small amount of the dressing, and gradually add dressing to taste. Season with salt and pepper.

    Incredible!
    My family and I really liked this dish. I used 2 tsp of the sriracha because we like it hot, but others may want to use it sparingly. Also, we omitted the peanuts and cut back on the amount of canola oil. - 6/29/09
