Ingredients

15g (or handful) of baby spinach
20g feta cheese, crumbled
1 small tomato (60g), sliced
1 large mushroom (20g), sliced
3 eggs (2 yolks removed)
1 small onion
1 clove garlic
1 tsp olive oil
1/2 tsp salt
pepper to taste
Directions
Whisk whole egg and 2 egg whites in bowl seasoning with salt and pepper.
Put oil in pan and sautee onions and garlic.
Pour in eggs, pulling the sides of the omlette inwards and letting the liquid in the centre run ove the edges.
Layer half the omlette with spinach, tomato and mushrooms. Crumble feta on top.
Fold omlette in half and flip over, cooking other side until feta is melted.
