Ingredients

    Cooked Quinoa, cooled (1 cup dry)
    Mrs. Dash Table Blend (1/5 tsp.)
    Shelled Edemame (1 cup)
    Chopped Walnuts (1/5 cup)
    Craisins (1/3 cup)
    Light tasting oil (2 Tbsp.)
    Seasoned Rice Wine Vinegar (2 Tbsp.)

Directions

Makes 8 servings:

Cook Quinoa according to package directions, adding Mrs. Dash seasoning at the beginning of the cooking time.

While Quionoa cooks:
* prepare Edemame (I buy a bag of frozen and shelled)
* chop walnuts
* measure out other ingredients

When Quinoa has cooled, place in a serving bowl, stir in the remaining ingredients, then chill and allow time to let craisins soften and flavors to blend. Enjoy anytime! This is a great portable salad for picnics, since there is no mayonnaise to spoil. Add some diced chicken for more protein.
