Introduction

Easy to make sauteed squash with vidalia onions. Tastes great hot or cold. You can cook this while preparing other dishes, just remember to stir every 3-4 minutes. Ingredients

    1 medium sliced zuchinni, about 1 cup.
    1 medium sliced yellow squash, about 1 cup.
    1 medium vidalia onion, sliced, about 1 cup.
    1/4 tsp pepper
    1/4 - 1/2 tsp garlic salt (california style with parsley)
    2 tbsp olive or smart balance oil

Directions

Slice zuchinni, squash and onions into uniform 1/8" thick slices. Preheat large deep skillet with olive or smart balance oil at medium heat. Add zuchinni, squash and onions and stir occasionally while cooking approximately 20 minutes, until squash and zuchinni are soft and clearish. You can let the mix brown a little to camelize the veges. Serve warm. Makes 3 1-cup servings. Refrigerated leftovers can be eaten cold.
