Ingredients

800 g fresh large carrots
400 ml agave nectar (or honey)
the juice of 1 orange
the juice of 1 lemon
Directions
Peel, wash and slice the carrots into a 1/2 inch thin slices. Fill a deep heave saucepan with water, add the fruit juices, cover and pour over a high heat. When statrs to boil add the carrots, cover again and cook until vegetables are tender.
Dry the carrots and transfer into the food processor, process to reduce into a puree consistency. Turn into the saucepan and add the agave nectar (honey). Pour over a low heat and cook uncovered, stirring occasionaly about 15-20 minutes, or until it reaches a thick creamy consistency. Allow to cool about 10 minutes. Divide into a sterilized jam jars. Chill completely at room temperature. If you make this marmalade in the summer, it'll be better if you store jars into the refrigerator. In the winter you can stor in a cold and dark place.
