Introduction
A simple recipe with no added fat or sugar. Excellent as toast with a bit of butter or extra honey for more sweetness.I used Chai for the tea - you can use any other tea as long as it's nice and strong (Roobios would be a good one too). Ingredients

1 1/4 - 1 1/3 C raisins + dried cranberries
1 1/4 C strong, hot tea
1/4 C honey
2 eggs
2 1/4 C flour
1/2 tsp cinnamon
1/8 tsp all-spice
1/8 tsp cardamom
1 Tbsp baking powder
1/4 tsp salt
Directions
Place raisins & cranberries in bowl. Pour hot tea over them, and stir in honey. Cover and let stand for 2 hours.
Preheat oven to 350.
Grease a regular loaf pan.
Stir eggs into raisin mixture.
In separate bowl, mix together rest of ingredients. Add to raisin mixture and stir thoroughly. Pour into greased pan.
Bake for 40-50 minutes or until tester comes out clean.
Remove from pan and let cool.
Makes 8-12 slices in one loaf or 8 mini loaves.
