Ingredients

    1/2 T Olive Oil
    1/2 onion, sliced
    1 clove garlic, minced
    2 t grated ginger, mixed with a few drops of water to make a paste
    1/2 t fennel seed
    1 t cumin
    1/2 t garam masala
    1/2 t chili powder
    1/2 t coriander
    1/2 t turmeric
    2 potatoes, cubed
    3/4 head cauliflower, cut into florets
    1/2 T fresh cilantro

Directions

Heat oil over low heat. Saute onions, garlic, ginger paste, and fennel seed until browned, 1-2 minutes. Add dried spices and cook another 30 seconds, stirring constantly.

Add potatoes and 1/8 cup water, stir to mix, cover and simmer 7-10 minutes.

Add cauliflower, cilantro, and 1/8 cup water, cover, and cook an additional 10-15 minutes, or until potatoes and cauliflower are tender.
