Introduction
This may not sound very good but it is. It really tastes like chicken enchiladas. The hominy sort of tastes like corn tortillas once it is mixed in with the other ingredients. Ingredients

1 can of Golden Hominy
1 can Green Enchilada Sauce
2 cups cooked chicken breast
1 can diced green chilis
2 eggs beaten
1/2 reduced fat sour cream
3/4 cup of Shredded Cheese (Monterrey Jack is best but I just used what I had)
Directions
Preheat oven to 375
Spray a 2 quart baking dish with cooking spray
Combine all ingredeints except for the cheese, in the baking dish ( I used a 2 quart casserole dish)
Season to taste
Top with shredded cheese
Cover with lid or foil and bake for 30 minutes depending on depth of baking dish you may reduce this to 20 minutes.
Uncover and bake for another 10 minutes.
Allow to sit for 10 minutes and serve.
