    Pink Salmon (fish), 16 oz: Marinate salmon in lemon juice, soy sauce, garlic, brown sugar, olive oil, and ginger

    Mango Salsa:
    2 Mangos, chopped
    1/2 Cucumber (with peel), 0.5 cup slices
    Sweet Corn, Fresh, 1 ear, medium (6-3/4" to 7-1/2" long)
    Onions, raw, 1 cup, chopped
    1 Peach
    Lemon Juice, 1 lemon yields
    mint/basil/cilantro
    2 tsp cumin
    black pepper
    cayenne pepper, just a sprinkle
    salt to taste

    Good
    I have to admit i didn't follow exactly...we didn't have any peaches and i used canned corn. but it was a nice fresh flavor and was good with the salmon..that i didn't marinate...would definately try again when all of the ingredients are in season - 2/16/10
