Introduction
Handed down from my Cajun Grandmother. We always ate this with rice, but it is good on potatoes also.Ayeeee!!!Use the same treatment with any meat you want from chicken to roast. Ingredients

4 center cut pork chops, trimed (Thin cuts will be dry,thick are better)
Tony's seasoning(or what ever spice you like)Use your own judgement on amount of Tony's.
1 cups chopped onion
1/4 cup celery
1/4 cup bell pepper
1/8 cup minced garlic(4 tsp.)
1/4 cup chicken broth (optional)
about 1 cup tap water
3tbls olive oil ( add more if pan gets too dry)
veg.oil can be used insead of olive
Directions
1 Season chops with Tony's.
2 Heat oil on high heat 'til hot.
3 Sear chops until very brown.If pan gets too dry add a little more oil. Remove to plate.They do not have to be cooked through.
4 Turn heat down to med.
5 Add onions, cook until caramelized , stirring often Again, don't let pan get too dry.
6 Add celery, bell pepper,( can be frozen ), cook until soft,stirring often
7 Add garlic. Cook for about 1 min. stirring constantly
8 Add broth & stir
9 Add chops back to pan
10 Add enough water to raise liquid to top edge of meat
11 Lower heat to low simmer.
12 Cover pot and simmer about 30 to 45 min until tender,turning chops over occastionally.
13 Let gravy cook down but not dry.Add water a little at a time if needed. You will need gravy for each person . Gravy to be served orver rice or potatoes.
PS Mash veg. with fork to make gravy thicker.You can strain out veg, or even put in prossesor to make smooth. It all depends on your prefrences.
Skim off any oil from top of gravy with a spoon.Nobody likes greasy gravy! If you have time, you can put gravy in frig or freezer 'til oil comes to the top for easy removal. then you have very low-fat gravy.
