Introduction

This is REALLY tasty - and you can use any firm fish - orange roughy, catfish, your choice.
I used lemon pepper instead of just pepper.

Ingredients

    1/2 cup flour
    1 egg beaten
    1/2 cup cornmeal
    1/2 t. salt
    1/2 t. lemon pepper
    3/4 pound fish of choice

Directions

Cut fish into one inch strips.
Place flour and egg in seperate shallow bowls and corn meal with seasonsings mixedin, in a third. Dip fish in flour, then egg, then cornmeal mixture.
Place on sprayed cookie sheet. spray top of fish with cooking spray (any work!)
Bake 8 minutes on 400 degrees, turn and bake an additional 8-10 minutes.
