Ingredients

    2 cups - Penne Pasta
    1/2 cup - onions, chopped
    1/2 cup - carrots, chopped
    1/2 cup - celery, chopped
    2 large - eggs, cooked
    3 or 4 tbsp. - calorie -wise Catalina Dressing
    2 or 3 tbsp. - calorie-wise Mayo

Directions

In a medium saucepan bring water to boil. Add pasta and eggs and simmer for 12 minutes. Chop up vegetables and add in a medium bowl. Drain pasta and add to veggies. Cool the eggs. Season with salt and pepper. Chop up cooled eggs and add to bowl. Add mayo and catalina and mix thoroughly.

Makes 6 - 1/2 cup servings.
