Introduction

Ingredients

    1 boneless, skinless chicken breast half
    1 cup red kidney beans, drained
    1/2 cup carrots, sliced (or any other veggie you like. Also good with corn)
    1/2 cup salsa of choice
    1 oz. shredded light cheddar or colby cheese (optional)
    1 tbsp reduced fat sour cream (optional)

Directions

Place chicken on piece of foil. Top chicken with salsa, carrots (or other veggies), and kidney beans. Fold foil to cover all ingredients, forming a packet. Place packet on pan in 350 degree oven and bake for 25 minutes until chicken is cooked and veggies are tender. Remove from packet and served topped with cheese and sour cream if desired.
Makes 1 serving.

    Very Good
    I thought this recipe was pretty good! I had to add some fresh jalapeƱos for extra spiciness. I added some cumin and and cayenne pepper to my chicken breast because I like my chicken to have some color (other than white). I used corn in my version. You should figure out how to make it into a chili - 4/15/08
