Ingredients

    3 cups all-purpose unbleached white flour
    1/2 cup granulated sugar
    2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt
    1/2 cup plus 1 tbs. crisco shortening (cold)
    1 cup dried fruits and/or nuts or cheese
    2 eggs
    1 cup sour milk (buttermilk or yogurt+skim milk

Directions

In mixing bowl, sift together 1st. 5 ingredients. Cut in shortening. Add fruit etc. Separate 1 egg. Beat yolk. Beat remaining egg plus white, with sour milk. Make a well in centre of dry ingredients. Pour in liquid all at once and combine with as few strokes as possible. Turn out dough onto a lightly floured surface. Knead gently. Pat or roll out to 3/4" thickness. Cut into rounds or triangles. Place on lightly greased or teflon-coated baking sheet. Brush tops lightly with reserved egg yolk. Sprinkle with granulated sugar or cinnamon. Bake in 400* oven for 5-6 minutes. Reduce heat to 350* and bake for 10-11 minutes or until golden. Cool slightly on rack. Makes 16 scones
