Ingredients

4 carrots, peeled
2 celery stalks
1 onion, halved
1/4 red bell pepper
3/4 cup mushrooms
8 scallions chopped
2 large eggs
1/2 cup pecans
1 tablespoon fresh thyme
2 garlic cloves
1 teaspoon salt or to taste
1/2 teaspoon hot pepper sauce or to taste
2 teaspoons sesame oil
1/2 teaspoon fresh ground pepper
5 cups matzo meal
2 tablespoons olive oil
Directions
1. Preheat oven to 475
2. Place the carrots, celery, onion, bell pepper, mushrooms, scallions, eggs, pecans, thyme, garlic, salt, hot pepper sauce, sesame oil, and pepper into the blender and secure the lid. Turn on the machine to low. Increase the speed and run for 30 to 45 seconds until ground, using a spatula to pusn down ingredients into the blades if necessary (stop the machine to do this). When blended, turn off the machine and remove lid.
3. Add 2 cups of the matzo meal to the mixture in the container and secure the lid. Turn on the machine and mix to make a firm but moist mixture. You may need to add more matzo meal.
4. Oil a baking sheet with the olive oil. Form mixture into 8 burgers. Coat each burger in the remaining 3 cups of matzo meal. Place burgers on the sheet and bake, turning once, until browned and crisp at the edges, about 12 minutes.
