Introduction

My variation on one I found at spark- I needed to know the nutrition values. Moist and yummy! My variation on one I found at spark- I needed to know the nutrition values. Moist and yummy!
Number of Servings: 12

Ingredients

    1/2 cup flax seed meal
    1/2 cup whole wheat flour
    1/2 cup oat bran
    1/4 cup brown sugar
    1 teas baking soda
    1/2 teas baking powder
    1/4 teas salt
    1 Tbls cinnamon
    3/4 cup shredded carrots
    2 apples, shredded
    1 egg
    1/2 teas vanilla
    1/2 cup pineapple with the juice(about 1/2 cup)

Directions

Shred carrot and apples. Add pineapple and set aside.
In a seperate bowl, add dry ingredients, including levening agents, powdered milk and salt, and mix. Add liquid milk, egg, vanilla and mix. Fold in shredded items.
Spray muffin tins with Pam, distribute batter evenly between cups. Bake 25 min at 350 degrees.
Makes 12 muffins.
