Ingredients

    Dressing

    3/4 C. White Vinegar
    1/2 C. Canola Oil
    1 tsp. salt
    1 Tbsp. water
    1/2 C. Sugar
    1/2 tsp. pepper

    Other ingredients

    2 oz. pimentos, drained
    15 oz. black beans. drained and rinsed
    15 oz. blackeye peas, drained and rinsed
    15 oz. pinto beans, drained and rinsed
    15 oz. chickpeas, drained and rinsed
    11 oz. shoepeg corn, drained
    14 oz. petite cut diced tomatoes & green chiles
    1 C. celery, diced
    1 C. onion, diced
    1 C. green pepper, diced

Directions

Mix dressing ingredients together and boil. Cool.

Combine other ingredients in large bowl. Pour cooled dressing over all. Refrigerate at least 24 hours before serving. May be kept for days. Serve with tortilla chips.
