Introduction

Ingredients

    10 medium corn tortillas
    1 10 oz can enchilada sauce
    2 lb. ground beef or turkey
    2 packets taco seasoning
    3 cups of shredded cheese, taco or fiesta blend

Directions

Preheat oven to 375. Brown and drain ground beef or turkey and add taco seasoning according to directions on packet. Set aside. Cut corn tortillas in half. Line the bottom of a greased 9 x 13in. baking dish with half of the tortilla pieces. Spread evenly with half of the enchilada sauce. Add beef mixture and spread evenly in pan. Top with remaining tortilla pieces, enchilada sauce, and cheese. Place in oven and bake at 375 for 10 minutes until cheese is melted. Serve with beans and rice or roasted corn. Makes approx. 10 servings
