Introduction
Can be used with chicken that has been pan fried first. I like to use the whole can of tomatoes. This sauce can be made while the meat is pan frying or can be made ahead of cooking time and only takes a few minutes. Ingredients

Canned Tomatoes and Juice - 2 Cups
Half a Lime Juice
Garlic - 1 Clove
Small Onion
Salt and Pepper - Dash
Cilantro(coriander) - 2 tbsp
Parsley - 4 sprigs
Directions
Liquidize tomatoes and the juice from the can.
Add lime juice, mix into sauce
Chop or crush garlic and add to the sauce, mix.
Finely chop small onion and add to the sauce and mix.
Add salt and pepper and mix again.
Chop cilantro (also know as coriander) and parsley and add to sauce and mix again.
Once the sauce has been made, any additional vegetables, such as chopped bell peppers, can be added if desired.
This sauce can be used straight away or can be made ahead of time - personly I like to make it ahead of time and store in the fridge to let the flavours develop.
