Ingredients

    3 tbsp butter
    3 tbsp flour
    1 c fat free half and half
    1 red pepper*
    1/2 onion*
    1 spear of broccoli *
    1/2 of chicken breast*
    1/2 pound (1/2 box) of dry macaroni
    8 ounces of cheese (I generally mix some local cheese - Old World Portuguese, Parmesan, mozzarella, and cheddar - all to equal about 8 ounces of cheese)
    salt & pepper to taste

Directions

Makes 6 servings

Prep the veggies (cut into small bite-size pieces), grate the cheese, and cook the chicken breast (optional) while cooking the noodles. Pre-heat the oven to 450.

After the noodles are finished, drain and wash them, and put them to the side. In the same pan over low heat, melt the butter. After it is melted, add the flour and mix together until it's a nice light brown color. Add salt, pepper and any other spices to taste. Turn up the heat and add the half and half (or milk), until it thickens to the consistency of a white sauce. Take off heat and mix in cheese so it melts. (To save time, you can also do this while the noodles are cooking.)

Add noodles and veggies to the cheese mix and put into 9" baking pan. You can add additional cheese on top, if you like.

Bake at 450 degrees for about 10 minutes, until the top is golden crispy. Add more time if you like it crispier.
