Introduction
A healthy, egg-free, low-fat breakfast treat! A healthy, egg-free, low-fat breakfast treat!Number of Servings: 10
Ingredients

2 cups flour
1 cup granulated sugar
2T baking powder
1/4 cup wheat germ
1/4 cup chopped walnuts
1/2 cup old fashioned oats
1 T vanilla extract
1/4 cups egg substitute
1 small banana mashed
2 cups Kefir low fat plain yogurt
Directions
Pre-heat oven to 350 degrees and prepare muffin tins for baking with a non-stick spray. Makes 10 Texas sized muffins or 15 regular sized muffins.
Mix or sift together the following dry ingredients:
2 cups flour
1 cup sugar
1/2 cup uncooked old fashioned oats
2 T baking powder
Stir in chopped walnuts and wheat germ to this mixture, set aside.
In a separated bowl, mix together egg substitute, mashed small banana, vanilla extract and yogurt. Quickly add moist ingredients to dry ingredients, mixing until just moistened.
Pour mixture into prepared muffin tins and bake at 350 degrees until tops of muffins are golden brown, approximately 30-35 minutes. Aloow to cool and remove from muffin tins.
Tastes great!
Note, nutritional information is for the larger sized Texas muffins, A regular sized muffin will have 3/4 of the calories.
