Ingredients

    2 cups Flour, 2 tbsp baking powder, pinch of salt, water, 10 tbsp oil (canola, vegetable or olive)

Directions

Makes 8, 1' foot rotis.

1. Combine sifted flour, baking powder and salt
2. Add water and mix until the dough is firm (not sticky)
3. Divide dough into 8 balls
4. Roll each ball out to about 5-6 inch diameter
5. Put 1 tbsp oil on each
6. Rub the oil with your fingers spreading over the entire surface of the rolled out dough
7. For each roll the dough as if making cinnamon buns. Then roll the length into a spiral
8. let sit for 30-90 min in a closed container (Tip: The longer you let sit the easier it will be to roll out. AND make sure the rolls are not allowed to dry out.)
9. When ready to cook warm the plateen/tawa or frying pan to medium/high heat.
10. Roll out the balls to about 12 inch diameter.
11. Spread a thin layer of oil on the plateen with paper towel or basting brush
12. Place rolled out roti on the plateen and spread thin layer of oil on faceup side.
13. When the cooking side turns light brown turn and cook until both sides are light brown
14. Store in a covered container to retain moisture.
15. When done serve with your favorite curry, chutney or jam for the kids.
