Introduction

Summer squash and chicken in a white sauce served over pasta. Summer squash and chicken in a white sauce served over pasta.
Number of Servings: 4

Ingredients

    8 oz's of pasta
    2 tsp of olive oil
    1 1/2 tbsp of crushed garlic
    1 large summer Squash chopped
    1/2 tsp of oregano
    1/4 tsp of crushed red pepper flacks
    4 oz's of cook and diced chicken

    *salt and pepper to taste.
    3/4 cup of chicken broth
    2oz's of neufchatel cheese

Directions

Bring a pot of lightly salted water to boil. Place pasta in and cook until done.
Heat olive oil in skillet over medium heat and cook garlic until slightly brown.
Mix in squash and season with oregano ,salt and pepper, and red pepper. Cook 10 minutes
Pour in broth and cook until heated
Add in chicken and cream cheese and cook 5 to 8 minutes (make sure cream cheese is all melted)
Serve over cooked pasta
