Introduction

oatmeal muffins, no flour or sugar used oatmeal muffins, no flour or sugar used
Number of Servings: 12

Ingredients

ingredients include raw oats, cooked kasha/barley mix, fat free milk, egg substitute, canola oil, baking soda, blueberries, banana, cinnamon, nutmeg

Directions

makes 12 muffins. Be sure to Pam spray, then lightly flour, muffin tin. Allow raw oats to sit in the "batter" for a few minutes, to soften. This way, the muffins won't seem too crumbly. The Splenda 24tsp amounts to 1/2 cup splenda. Using egg beaters instead of real eggs decreases the cholesterol in these muffins a lot. Sodium is listed as 290mg per each muffin... YIKES. That seems high to me. No extra salt added anywhere. Suggestions welcome to lower that salt content.
Where it says kasha grain, this is a mix of kasha, brown rice, barley, and some sesame seeds. I use precooked grain. Use more or less raw oats to make the consistency right. Allow to cook until done, clean toothpick test. Add blueberries and/or banana as desired. Turn out on cooling rack to cool completely before storing.

To eat, heat in microwave for about 20 seconds and you will have heaven.
