Introduction

A refreshing summer side to fresh fish or chicken breast. A refreshing summer side to fresh fish or chicken breast.

Ingredients

    1 ripe mango
    1/2 cup diced green bell pepper
    1/2 cup diced red onion
    juice from 1/2 lime
    fresh cilantro to taste

Directions

Start by chopping bell pepper and onion, place in bowl.

Peel mango. Cut fruit away from large pit. Dice. Place in bowl with pepper and onion.

Cut lime in 1/2 and squeeze juice on top. Toss and serve.

*This recipe could be 2 servings if used as topping, but if you want as a side, I reccomend one serving. This recipe is very easily doubled, tripled, etc.

    I also use jalapeņo and some diced tomato! It is delicious! I like to serve it over tilapia served with brown rice. It's a sweet/spicy and refresing light lunch! - 7/29/09

    this is a great snack as well i have put yello pepper and a red pepper w/ the jalapeno. it lasts all week long so u can go to it as the week gos by . - 10/1/09
