Introduction
got this from a friend and modified it a bit to make it less calories...**NOTE** this is low cal because I use 93/7 ground turkey and whole wheat noodles; if you change that the calories will increase, however if you use less cheese the calories would go down... - (there is about 250 calories per roll the way I make it)
*VARIATION* another way to make this would be to substitute the ricotta with fat free cottage cheese and add 1/2 tbsp low fat cream cheese to each roll (just plop it in the middle) - this should not change the calories by much and would be super yummy... got this from a friend and modified it a bit to make it less calories...

Ingredients

1 lb 93/7 ground turkey (or ground beef, sausage...)
1 box whole wheat lasagna noodles (or regular if you prefer)
3/4 cup chopped onions
1 jar spaghetti sauce
1 small container of Ricotta Cheese
2 cups Mozzarella cheese (divided)
1/2 cup grated Parmesan cheese
Directions
preheat oven to 350
brown meat and onions (set aside to cool)
cook lasagna noodles (boil with some oil in the water to keep them from sticking - run cold water on them to cool them off)
Mix ricotta cheese, 1 cup mozzarella cheese and Parmesan cheese (combine with meat when cool)
pour about 1/2 inch of spaghetti sauce into bottom of 9X13 baking dish
spoon cheese/meat mixture onto each lasagna noodle and spread it out - leave about 1 inch at the end empty for when you roll it (pat them dry first to remove excess water) (do not go over board on the filling, or you won't have enough) (about 1-2 tablespoons per noodle - give or take)
roll the noodle and place into 9X13 baking dish SEAM SIDE DOWN
I am able to fit 15 rolled noodles into my dish
pour remaining spaghetti sauce over noodles and sprinkle the remaining cup of mozzarella cheese on top (you can also sprinkle a little Parmesan cheese as well)
Bake for 45 minutes
