Ingredients

4 cups yellow squash, sliced, with skin
2 eggs
1 cup seasoned breadcrumbs
1 cup Ragu sauce
Pam spray
1/4 cup grated Parmesan cheese
Directions
Beat eggs in a bowl.
Spread breadcrumbs in a wide, flat dish.
Dip each squash slice in egg, then in breadcrumbs to coat. Spread in single layer on a baking tray. Spray lightly with Pam.
Cook at 350 for 5-10 minutes. Check frequently to make sure slices are not burning; thickness of slices affects cooking time.
Spread a few spoonfuls of sauce at the bottom of a glass baking dish (9x12). Put a single layer of baked squash pieces. Continue to alternate sauce with squash. Top with sauce and cheese.
Bake at 350 for 20-30 minutes or until bubbly and starting to brown on top.
Makes 8 servings. Good as a sandwich filling (Italian bread) or on its own.
