Ingredients

    1.5 lbs. Japanese eggplant
    3 Tbs canola oil
    3 scallions, chopped white and green sections
    5 thin slices of peeled ginger root diced
    5 cloves garlic peeled and chopped
    2 Tbs soy sauce
    2 Tbs Roased Red Chili Paste
    3 Teas Splenda brown sugar
    3 Teas Red Wine Vinegar
    2 Teas sesme oil
    5 Tbs chopped Cilantro

Directions

This makes 6 servings at 4 ounces each approx

Roll cut eggplant

Steam eggplant for 17 minutes

Using wok add oil over high heat, add scallions, ginger, and garlic. Cook 1 minute. Add eggplant. Cook 1 minute.
Add soy sauce, chili paste, sugar, and vinegar. Cook 3 minutes. Add sesame oil and stir once. Serve with cilantro sprinkled on top.
