Ingredients

    1 cup milk (1% used in calculation)
    1 cup old-fashioned rolled oats
    1 cup white flour
    1 cup whole wheat flour
    1/2 tsp. salt
    1 tbsp. baking powder
    1/4 cup sugar
    1 egg
    2 tbsp. oil
    1-1/4 cup mashed bananas (about 3 medium)
    cooking spray

Directions

Preheat oven to 400 degrees F. Spray a 12-cup muffin pan with cooking spray.

In a large mixing bowl, pour milk over rolled oats. Allow to soak while preparing remaining ingredients.

In a small bowl, combine flours, salt, and baking powder. Mix to distribute ingredients.

Add egg, sugar, and bananas to milk and oats, and mix well.

Add flour mixture to other ingredients. Stir gently until just moistened. Batter will still be lumpy.

Pour batter into muffin pan, filling each cup about 2/3 full.

Bake at 400 degrees for about 20 minutes, or until tops of muffins are lightly browned and a toothpick inserted into the center of a muffin comes out clean.

Remove muffins from pan and cool on a cooling rack.

Makes 12 muffins. 1 muffin = 1 serving.
