Ingredients

    1 Med Zucchini- sliced to make about 2 cups
    1/2 Cup Corn Meal
    1/4 Cup Flour
    2 Tab. Grated Parmesan
    1 1/2 Tea It. Seasoning (fresh if you have it)
    1/2 Tea. Garlic Powder (optional)
    1 Egg White
    1/4 Cup 1% Milk (or skim)
    1 Tea. Olive Oil

Directions

Combine dry ingredients. Beat Egg White and Milk (add S&P if wanted)
Dip Zucchini in egg mixture, then in cornmeal mix. Arrange on a cookie sheet sprayed with cooking spray.
Drizzle/ olive oil.

Bake: at 400 degrees for 15 Minutes, turning once during backing.

Eat Hot or cold. Great as a snack.

    We made with a combination of zucchini & summer squash, which worked well. We found that if the slices are too thin, the medallions tend to be too dry. 1/4" slices are probably best. - 5/5/10
