Introduction

Great as a dip/appetizer, but we also love it as a main course! Wrap it up in a tortilla with some cheese and fresh avocado, and it's a great summer meal. Quick, easy, and fresh! Ingredients

    1 can black beans, drained and rinsed
    1 can Great Northern or navy beans, drained and rinsed
    1 can Rotel
    1/4 c. red onion, chopped
    1/4 c. fresh cilantro, chopped
    2 small jalapeno peppers, finely chopped (optional)
    2 cloves minced garlic
    3 Tbsp. vinegar
    1/2 tsp. sugar
    1/2 tsp. salt
    black pepper to taste

Directions

Mix all together and serve either as a dip with tortilla chips, or as an entree by wrapping in a tortilla. Garnish with sour cream, avocado, or cheese as desired.
