Number of Servings: 12

Ingredients

    1 c. whole wheat flour
    1/2 c. quick oats
    1 Tbls. baking powder
    1/2 tsp baking soda
    1/4 tsp. salt
    1 tsp cinnamon
    1/2 tsp. nutmeg
    2 small ripe bananas, mashed
    1/4 c. sugar
    4 oz. individual container nonfat yogurt (I used Dannon Light and Fit Strawberry)
    1 egg
    1/2 tsp vanilla

Directions

Pre-heat oven to 350. Prepare muffin pans with no-stick spray or wrappers. Combine dry ingredients. In a separate bowl, beat egg, sugar, and vanilla. Add banana and yogurt. Stir banana mixture into dry ingredients, just until moistened. Spoon into muffin pan. Bake for 15-20 minutes (until toothpick inserted in the center comes out clean)

Makes 12 muffins.
